I can’t believe that I hadn’t been to Varnish until a couple nights ago. It’s that little sign on the door that really gets me. I mean, who doesn’t love a hidden, unmarked gem a block away from his loft? At first I had avoided it because I had heard stories of a small packed room and hours for drinks, but this was FAR from the case. Despite local celeb Ryan Gosling entertaining a harem of stunning ladies, the place was pleasantly full but not packed (it only holds 55).

But it was watching the bartenders John and Chris that made the whole experience complete. John used to be a resident of Spring Towers (where I live) and is now a resident at The Haas Building (where I work). It’s been really fun to chat with him about his work and even read about him in the Los Angeles Times and The Downtown News. I’m really fascinated by people who love their profession and are great at what they do. I personally have never met a mixologist before John. This guy spends big bucks (with help from his employers) to travel the world and stay up to date on the chemistry that makes the mixing of spirits so intoxicating.

And just in case you were wondering, I got no discounts, special seating or favors for blogging about Varnish. The bill for 3 great drinks was still a whopping 36 bucks, but definitely worth every drop.
